Can I use some categorical variables as covariate while doing ANCOVA in JAMOVI?

assuming you're not doing "the wrong thing", and the categorical variable is appropriate to be included as a covariate (which doesn't seem that likely, tbh :P). yes you can.

Thanks, Jonathon. My categorical variable is text type, and JAMOVI seems not to allow use text type covariate. How can I use text type variable as covariate?

if you're wanting to use a text type variable as a covariate, i'd suggest the chances that you're not "doing the wrong thing" are pretty slim ... but you can transform the variable to be numeric:
