In the accessibility guide linked below, it mentions that the entire user interface can be "zoomed in" (for standard 1.4.4 Resize text). Can you provide instructions for how to do that? I have a low-vision student who is wanting to do that.

With jamovi open, click the 3 vertical dots in the upper right corner. You'll see an option to zoom + or - from 100%.
According to the document:
1.4.4 Resize text: Except for captions and images of text, text can be resized without assistive technology up to 200 percent without loss of content or functionality. (Level AA)
